Six tortillas
One tablespoon of butter
Cilantro

How to prepare:

Beat the eggs and mix with jalapeno peppers, salt and pepper. Melt the butter in a sauce pan, pour the mixture, and cook until dense. Place a slice (or two) of cheddar on each of the tortillas. Pour the egg mixture. Top with the chopped peppers, tomato, and cilantro. Roll and tuck tortillas. Bake at 350. Approximate cooking time: 10-12 minutes.
